In medium bowl, combine oats and egg. Mix until oats are completely covered.
In 10" skillet over medium heat, melt butter (or olive oil). Add oat mixture. Cook, stirring constantly, for 5 minutes, or until oats are dry, separated, and lightly browned.
Add broth or juice and salt, and continue cooking, stirring occasionally, for 3 to 4 more minutes, or until liquid evaporates.
Serve hot as a substitute for rice or potatoes. Fruit juices add sweetness to oats; stock creates a savory flavor. Add your favorite herbs or spices to oats as they cook to compliment the rest of the meal.
For an extra iron boost, add blackstrap molasses. It's intense, but good, and has 70% RDA of iron per tablespoon.
